Salmon Croquettes

1 can Salmon
1/2 Yellow onion
2 Eggs
Cornflake crumbs or Panko

Steps

  1. Set oven to 375°F.
  2. Dice yellow onion.
  3. Whisk eggs.
  4. Mix salmon, eggs, and onion in a bowl with a fork.
  5. Grab and compress oblong shapes from the mix, about 1" diameter by 2" long.
  6. Roll the croquettes in corn flake crumbs or panko.
  7. Bake at 375°F for 30min.
