Oatmeal Raisin Cookies

Ingredients

3/4 cup Butter (softened)
3/4 cup Sugar
3/4 cup Light brown sugar (packed)
1 tsp Vanilla extract
2 Eggs
1 1/4 cups All-purpose flour
1 tsp Baking soda
1/2 tsp Salt (optional)
3/4 tsp Cinnamon
2 3/4 cups Rolled (quick) oats
1 cup Raisins

Steps

  1. Preheat oven to 375°F.
  2. In a large bowl, cream together butter, white sugar, and brown sugar until smooth.
  3. Beat in the eggs and vanilla until fluffy.
  4. In another bowl, stir together flour, baking soda, cinnamon, and salt.
  5. Gradually beat flour mixture into butter mixture.
  6. Stir in oats and raisins.
  7. Drop by teaspoonfuls onto ungreased cookie sheets.
  8. Bake 10 minutes in the oven, or until golden brown.
  9. Allow to cool slightly, then transfer to cooling rack.
