Chocolate Cheesecake

Ingredients

1 1/3 cups Graham cracker crumbs
1/2 stick Unsalted butter
1 Tbsp Cocoa
1 Tbsp Sugar
8 oz Semi-sweet chocolate chips
32 oz Cream cheese
3/4 cup Powdered sugar
4 eggs
1 cup Sour cream
1 tsp Vanilla extract

Notes

  • When placing in oven, try setting pan in a larger container with a few inches of water to help prevent cracking.

Steps

  1. Leave cream cheese out to warm to room temperature.
  2. Preheat oven to 350°F.
  3. Mix ingredients for crust and cover bottom of 10" springform pan.
  4. Melt chocolate in microwave or in bain-marie.
  5. Mix cream cheese with sugar.
  6. Add eggs one at a time, mixing well.
  7. After chocolate has cooled to be warm, but not hot, mix in.
  8. Bake for 50-60 minutes. Pie should be set and have a bit of a wobble.
  9. Turn off oven, open oven door a few inches, and let cake stay another 15 minutes.
  10. Remove from oven and let cool for 45 minutes. Then move to refrigerator. Allow to cool for at least another 2 hours.
